Florentine aka Almond Flakes

I started to fall in love with florentine cookies when I saw my old friend posted it on facebook. I got the recipe from her and tried baking it last raya. It turned great and my hubby loves it very much. The only problem is, it easily cracked thus I could not cut it properly....

As recommended by my friend,  used florentine premix from House of Ingredients..
I also found that other bloggers use different premivx with different names eg:
a) Golden Arrow (It is a trade secret but I suspect it is a caramel mixed with some other stuff) (Code: GA 15/18) - 200 gram (RM12.00) - only available in Penang

b) Siebin brand Bee-sting mix- where can I get it. price RM 12 per 250g

c) Bienetta- at  Bake Ideas 4, Jalan Damai Perdana 1/8A, Bandar Damai Perdana, Cheras, Kuala Lumpur, 56000, Kuala Lumpur, WP Kuala Lumpur HP 016- 381 6368 . Can also find at Baguz bakery shop

d) DIY
The ingredients are 3 egg whites, 1/4 cup (all purpose) flour, 1/3 cup sugar, 2 tbsp oil and 1 1/2 cup thin sliced roasted almonds.

Per request, I am including the measurement in grams as follows:
3 egg whites, 32g all purpose flour, 67g sugar, 2 tbsp oil and 128g almonds.

Now I know, I have to cut it before it harden. Cant wait to try it again...
This cookies will be my compulsory kuih raya from now on...
